The congress organizers are aware of the recent terrorist attacks and threats from international and indigenous groups, and will do all in their power to provide you a secure conference environment. We closely work together with the Istanbul Metropolitan Municipality and other local Turkish Authorities to guarantee the highest security for our participants. We also recommend our participants to follow safety rules during their stay which will be indicated on the congress website next week after getting the latest information from the officials.

Message from ICBC Chair

Dear Participants,

We would like to thank you for your interest in the 15th International Cereal and Bread Congress – 15th ICBC to be held in Istanbul on 18-21 April 2016.There has been a great interest in our congress. We received a large number of submissions for oral and poster presentations and we are currently trying to finalize the scientific program.

We would like to inform you that the venue has been changed after a detailed discussion with the Organizing and Advisory Committee members. The new venue is Military Museum and Culture Site. This decision was taken mainly due to the problems with the hotel. We have been encountering some conflicts with the Wyndham Hotel. Some of the Committee members received fraud/ phishing phone calls and/or e-mails asking for money transfers for hotel reservation. The calls indicated that very few rooms were left to urge the participants. We informed the hotel about the fraud calls; however, they did not collaborate with us. ARBER Company is not willing to continue with Wyndham Hotel because they think they might encounter other problems during the congress.

This change will give us opportunity for; more exhibition area for sponsors, more affordable accommodation options for the participants (which will be announced soon), more funds to support young researchers.

We would also like to take this opportunity to give you some information on another issue. A recent UN report indicates that the east of Turkey has some safety issues (which we hope that are temporary), whilst the central and western regions of Turkey are indicated as a Green Zone. Please be aware that participant security and comfort are our priority. Our evaluations on this matter indicate that there is no difference between Istanbul and other European metropolitan cities such as Paris, London, Stockholm, Brussels etc.

Welcome Letter

15th International Cereal and Bread Congress (15th ICBC) will take place in İstanbul, bridging the East and West, right at the crossroad of different continents and cultures.

15th ICBC will be organised by ICC – International Association for Cereal Science and Technology and ICC's national representation in Turkey, Hacettepe University: your partners in cereals, flour and bread in the European/Asian region. The focus of this international conference will be storage, marketing and development of innovative cereal products meeting consumers' needs (added values in convenience, taste, nutrition and health, safety and security). Exploiting new raw materials/ingredients and new technologies, producing functional foods in the legal framework, and alternative uses of cereals will be topics of the congress.

15th ICBC is expected to accommodate about 1000 delegates from around 80 countries from all continents, addressing researchers and manufacturers, policy makers and regulatory bodies, industries and SMEs in the areas of food production, grain/crop breeding and growing, storage, milling, baking and food processing as well as students and professional who would like to get up-to-date with modern technology and to establish international collaboration. The event is an excellent opportunity for networking and extending business/cooperation opportunities. Exhibitors and sponsors are welcome and will complement the oral and poster presentations.

International Cereal Science and Technology Conference and Exhibition (ICST) will be organised by Hacettepe University together with 15th ICBC. This major international cereal science and technology event is planned to be organised regularly after getting started with 15th ICBC.

İstanbul will welcome you with warm spring weather and plenty of opportunities to experience the cultural and historical gate bridging the East and West. The organisers of the meeting are looking forward to meeting you in İstanbul in April 2016.

Measurement of Polysaccharides and Enzymes in Cereal Grains and Cereal-based Foods

Barry V. McCleary, Vincent McKie and Ida Lazewska, Megazyme International Ireland, Bray Business Park, Southern Cross Road, Bray, County Wicklow, Ireland.

Many of the quality parameters of cereal grains are dictated by their polysaccharide and enzyme content. Utilization of grain is also affected by the physical and biochemical properties of specific polysaccharides such as starch.

In this workshop, methods that have been developed by Megazyme and validated through interlaboratory studies under the auspices of AOAC, AACC and ICC, for the measurement of a range of polysaccharides and enzymes will be described in detail. The workshop will include practical demonstration of an automated procedure for the measurement of α-amylase in cereal grains and limit-dextrinase in malt, as well as manual procedures for β-xylanase and cellulase. Developments in dietary fibre analytical methodology will be demonstrated as well as overviews of methods for the measurement of starch, starch damage, resistant starch, β-glucan and arabinoxylan.

Bread is a key ingredient of our diet. The bread industry is evolving with global changes, and despite a small per capita decrease in global bread consumption (according to Euromonitor approx. 0.3% decrease per annum), there are still major growth opportunities in the baking industry. As the world is urbanizing, an increasing number of people are putting bread on their diets in urbanizing centers . Also consumer lifestyle is changing. At the same time, industry consolidation is progressing, and local artisanal bakeries face increasing competition from supermarkets and hypermarkets. The in-store bakery concept offers consumers a broad, attractive and daily-fresh offering to complete with local bread shops. In turn, local bakeries respond by grouping themselves into bakery chains to increase economy of scale and buying power.

All these developments provide great opportunity for Frozen Dough (“Frodo”) applications. Frozen dough offers many advantages for the consumers, and the baking industry alike. According to Mintel, the frozen dough market has grown with 8.1% over the period 2006-2011, although in some parts of the world the frozen dough market is growing much more rapidly.

The application of frozen doughs and bread ingredients is not as straight forward as we are used to in common bread making due to the unique conditions during bread making and frozen storage. During this workshop the experts of DSM will address the most important issues around frozen dough processing and offer suggestions and solutions helping you selecting the right ingredients to create the most stable and consistent bread quality.

BIOPROT Project Protein Session

Finding new sources of plant proteins is a necessity to obtain sustainable and affordable foods for the growing global population since the production of animal protein is not a feasible option in the future. There are two major solutions to increase plant based protein sources:
1) Increased cultivation of protein rich crops and,
2) Efficient utilisation of protein rich plants or side streams of food production. BIOPROT project focuses on to develop novel plant protein ingredients through applications of bioprocessing technologies to further valorise underutilized protein rich raw materials such as bran and faba beans. The results of the project will have an ultimate impact on cultivation of an ancient crop; faba beans but also contribute to protein self-sufficiency and circular bioeconomy in Europe by utilizing agro-food side streams.

During the final meeting we will present the results and outcomes of BIOPROT but also we invite oral and poster presentations for our session “Innovating with plant proteins”.

Turkey in Brief

Turkey is a rapidly developing secular democracy with a population of nearly 70 million and is a candidate for membership of the European Union. Visa

All participants are required a valid passport and may be required a visa for visiting Turkey. Please contact your nearest Turkish Embassy / Consulate for this purpose. Participants from those countries where there is no Turkish diplomatic representation office can obtain their visa at the airport on arrival to Turkey. Banking & Currency Exchange

The currency unit is “Turkish Lira". Some foreign currency can be exchanged on arrival at the airport in İstanbul. Most of the banks are open from 9:00 to 16:30 Monday through Friday, some banks in the city provide extended banking hours. Exchange facilities are also available in hotels and exchange bureaus located in the city center and shops near the venues.

Most of the hotels, restaurants and shops accept major international credit cards.

Personal Insurance & Liability & Emergency

Personal insurance and accident insurance are recommended to all participants during their stay in Turkey . The Organizing Committee will not accept any responsibility in this respect but assistance will be provided in urgent cases. In case of illness or accident, contact the hotel receptions or registration desk in the Congress venue. The participant in the Conference agrees that the Organizing Committee and Secretariat does not assume responsibility for personal medical and travel expenses incurred during the Conference. Participants are advised to obtain their own travel insurance policies. Attendees waive any claim against the Organization for injury or other damages resulting in any way from Conference participation. Climate & Dressing

Starting from end of March, temperatures increase significantly. During day time averages at 20' C in Istanbul but nights are colder around 15' C. Tulip blossom time is around mid April which is an indicator for spring. Rains are common and night temperatures are cooler than day time. Don't forget umbrellas and rain coats and get prepared for winds.

Business & Shopping Hours

Government offices are open in weekdays from 8:30 to 17:00 and closed at the weekend. Most of the shops are open from 9:00 through 19:00 Monday to Saturday. Some of the supermarkets, shopping malls, department stores, newspapers and food shops are also open on Sundays. Certain newspapers in English, German and French are available in the hotels.
